Ingredients

  • 800 g pumpkin (e.g., butternut)
  • 1 bunch spring onions
  • Olive oil (for brushing and drizzling)
  • Pepper (freshly ground)
  • Salt
  • 1 tsp ground ginger
  • 1 pinch nutmeg
  • 800 g salmon fillet
  • 4 tbsp crushed mixed peppercorns
  • 1 Tbsp clarified butter

Instructions

    Preheat the oven to 200°C (400°F) with upper/lower heat. Peel, deseed and cut the pumpkin into wedges. Wash and trim the spring onions, cutting them in half if desired.

    Line a fire‑proof dish with oil, place the vegetables inside, drizzle with oil, season with salt, pepper, ginger and nutmeg. Roast in the preheated oven for about 30 minutes.
