Pan‑fried Mushrooms with Onions

Ingredients
- 1 handful curly parsley (5 g)
- 800 g Mushrooms
- 1 onion
- 1 Garlic clove
- 2 tbsp butter (30 g)
- 2 tbsp olive oil (30 g)
- Salt
- white pepper
- 1 tbsp sherry vinegar
- a splash of lemon juice
Instructions

Rinse the parsley, shake dry, pluck the leaves and finely chop. Clean the mushrooms and cut off the stems. Peel and finely dice the onion and garlic.

Heat butter and olive oil in a large pan and sauté the onions with the garlic until translucent. Remove them, add the mushrooms to the pan and cook for about 5 minutes, turning occasionally, until lightly browned. Return the onion mixture, season with salt, pepper, sherry vinegar and lemon juice, and taste.

Remove the pan‑fried mushrooms from the pan, mix in the parsley, and serve warm or cold as desired.
