Pan‑fried Goat Cheese with Arugula

Try the delicious pan‑fried goat cheese with arugula from Spoonsparrow or one of our other healthy recipes!

Ingredients

  • 8 Cherry tomatoes
  • 8 shallots
  • 200 g goat cheese (log)
  • 0.5 whole‑grain baguette (cut into 8 slices)
  • 60 g arugula (1 bunch)
  • 2 tbsp olive oil

Instructions

    Wash the tomatoes and halve them. Peel the shallots and halve them as well. Spread both on a baking sheet lined with parchment paper and bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 20 minutes.

    Meanwhile, slice the goat cheese into 8 pieces and arrange them on the baguette slices.

    After 20 minutes of baking, place the baguette slices onto the tray with the vegetables and bake for an additional 5 minutes.

    In the meantime, rinse the arugula, wash it, dry by spinning, and divide among 4 plates. Top each plate with tomatoes and shallots, then add two goat cheese pieces on top. Drizzle with olive oil.
