Grilled Moose Steak with Mixed Vegetables

Ingredients

  • 4 moose steaks (about 160 g each)
  • 1 clove garlic
  • olive oil
  • 1 chili pepper
  • 500 g asparagus
  • 1 red bell pepper
  • 4 yellow baby peppers
  • 4 salad hearts
  • 4 tomatoes
  • 4 pre-cooked corn cobs
  • Sea salt
  • freshly ground black pepper
  • 200 g yogurt
  • 50 ml Buttermilk
  • 2 tbsp freshly chopped herbs
  • Lemon juice

Instructions

    Wash the steaks, pat dry and place in a shallow dish. Peel the garlic and slice into rounds. Mix with 4-5 tablespoons of oil and pour over the meat along with the sliced chili pepper. Turn to coat evenly and cover; let marinate in the refrigerator for about an hour.

    Meanwhile, peel the asparagus and parboil in salted water for about 15 minutes until firm. Shock in cold water and drain. Wash and halve the bell peppers. Wash, trim and halve the salad hearts. Slice the tomatoes. Arrange the corn cobs, salad, asparagus, peppers and tomatoes on grill trays. Drizzle with oil, season with salt, and grill for about 15 minutes, turning occasionally. Remove the steak from the oil, strip off garlic and chili, and grill the meat again for 5-10 minutes. Finish by seasoning with salt and pepper.

    For the dip whisk the yogurt with buttermilk and herbs until frothy; season with salt and lemon juice.

    Serve the grilled steak alongside the vegetables and dip on platters or plates.
