Ingredients
- 650 g fish fillet
- 2 tbsp lemon juice
- Salt
- black pepper (freshly ground)
- 1 tbsp butter
- 1 tbsp Olive Oil
- 650 g onions
- 2 large tomatoes
- 50 g butter
- 150 ml water
- Salt
- 150 g Sour cream
- dill sprigs
Instructions

Drizzle the fish fillets with lemon juice and season with salt and pepper.

Heat butter and olive oil in a pan and brown the fish fillets on both sides.

Peel the onions, cut them lengthwise into halves and slice into strips. Wash the tomatoes, quarter them, remove seeds and dice finely.

Sauté the onions in clarified butter until translucent, season with salt, pour in water, cover and steam for 5 minutes over low heat, then stir in sour cream and tomato cubes and add dill sprigs. Serve the onion sauce with the pan‑fried fish fillets.
