Pan‑fried eggs with Swiss chard from Spoonsparrow: a green‑white delight

Ingredients

  • 1 kg Swiss chard
  • 2 onions
  • 2 tbsp germ oil
  • Salt
  • freshly ground pepper
  • 2 tsp seasoned broth
  • 200 ml heavy cream
  • 4 eggs
  • 1 tbsp butter
  • parsley (for garnish)

Instructions

    Separate the Swiss chard into leaves, wash, shake dry and cut out the tough central ribs. Roughly chop the chard. Peel and dice the onions.

    Heat oil in a large pot. Add the onions and sauté over medium heat until translucent. Add the chard, stir to wilt, and cook for about 4–6 minutes. Season with salt, pepper, and seasoned broth, then stir in the cream.

    Melt butter in a skillet, crack the eggs into it, and fry to your liking. Season with salt and pepper. Plate the Swiss chard mixture topped with the fried eggs.
