Chickpea Flour Pancakes with Swiss Chard

Fluffy chickpea flour pancakes filled with Swiss chard and herbs from Spoonsparrow are always delicious.

Ingredients

  • 275 ml milk
  • 150 g chickpea flour
  • 1 pinch salt
  • 2 Eggs
  • 2 tbsp butter
  • 1 large Swiss chard
  • 4 Spring Onions
  • 1 Garlic clove
  • 4 Sage leaves
  • 2 tbsp olive oil
  • Salt
  • nutmeg

    Preheat the oven to 80°C (Oven with top and bottom heat). Whisk the milk, chickpea flour, and a pinch of salt until smooth. Stir in the eggs and let the batter rest for 15 minutes. Cook each pancake in not-too-hot butter until golden yellow, then keep warm in the preheated oven.

    Wash, trim, and chop the Swiss chard into green and white parts. Slice the spring onions into rings. Peel and finely mince the garlic. Sauté the chard whites and spring onions in hot oil for 1–2 minutes. Add the chard leaves and chopped sage, cooking for another 2–3 minutes until tender. Season with salt and nutmeg, then fill the pancakes with the mixture and serve.
