Swiss Chard & Fennel Veggie with Egg

Ingredients
- 1 stalk Swiss chard
- Salt
- 2 bulbs fennel
- 1 onion
- 1 Garlic clove
- 4 tbsp olive oil
- freshly ground pepper
- 100 g Gouda cheese
- 4 egg yolks (M)

Clean the Swiss chard, rinse it and roughly chop the leaves. Boil in salted water for 4-5 minutes. Drain and let it dry well.

Wash the fennel, quarter it and remove the core. Rinse the fennel and slice into fine strips. Peel the onion and garlic. Dice the onion finely.

Heat olive oil in a large pan. Sauté the fennel until crisp. Add the onions and squeeze in the garlic. Mix in the Swiss chard and simmer everything for 8-10 minutes. If needed, add a little water or broth. Season with salt and pepper.

Grate the Gouda cheese finely. Arrange the vegetables on a plate, sprinkle with cheese, place an egg yolk on top and serve immediately. Optionally cover to melt the cheese and set the yolk.
