Vegetarian Patties

Ingredients
- 1 Shallot
- 1 Garlic clove
- 2 tbsp olive oil (≈20 g)
- 250 g millet
- 2 Eggs
- 2 tbsp breadcrumbs
- 1 handful herbs (e.g., basil, chervil, thyme)
- Salt
- ground pepper
- freshly grated nutmeg

Peel and finely dice the shallot and garlic. Briefly sauté in hot olive oil, then deglaze with about 500 ml broth. Rinse the millet in a sieve and add it to the broth. Cover and simmer gently for about 15 minutes. Remove from heat and let stand covered for another 15–20 minutes, adding more broth if needed. The millet should absorb all liquid by the end.

Let the mixture cool slightly uncovered, then stir in the eggs, breadcrumbs, drained and finely chopped herbs. Season with salt, pepper and nutmeg, and shape into patties.

Heat oil in a pan and fry the patties in batches, browning each side for 2–3 minutes until golden. Drain on paper towels and serve.
