Ingredients
- 4 bunches Pak Choi
- 3 tbsp Sesame oil
- 1 red chili pepper
- 150 ml dark soy sauce
- 2 tbsp freshly grated ginger
- 2 tbsp freshly chopped lemongrass
- 1 tsp mirin (sweet rice wine)
- 1 tbsp Sesame seeds

Separate the leaves from the Pak Choi stems, wash, dry and pat them. Heat the sesame oil in a pan and stir‑fry the Pak Choi leaves for 4–5 minutes, turning occasionally.

Meanwhile, prepare the dressing: wash the chili, halve it lengthwise, remove seeds and finely chop. Mix with the remaining ingredients and season to taste. Drizzle the dressing over the Pak Choi and serve plated with sesame seeds sprinkled on top.
