Red Beet Apple Salad with Cherries

Ingredients

  • 600 g Red Beet
  • 2 Apples
  • 100 g sweet cherries
  • 100 ml cherry juice
  • 200 ml red wine vinegar
  • 3 cloves of mace
  • 1 cinnamon stick
  • 2 cardamom pods
  • 2 allspice berries
  • 1 bay leaf
  • Salt
  • sugar (to taste)

Instructions

    Preheat the oven to 200°C with upper and lower heat. Wash, trim, and wrap the red beets in foil; bake for about 40 minutes.

    Meanwhile, peel, quarter, core, and slice the apples into strips. Rinse the cherries, drain, and pit them.

    Unwrap the baked beets from foil and cut into strips. Layer the beet strips, cherries, and apple slices in well-drained jars.

    Bring together cherry juice, 300 ml water, and vinegar to a boil; add mace, cinnamon, cardamom, allspice, bay leaf, salt, and sugar. Simmer for 5 minutes. Pour the hot liquid into the jars, seal tightly, and store cool and dark.
