Ingredients

  • 16 fresh oysters
  • juice of one lemon
  • trout caviar
  • lemon zest

Instructions

    Wash and open the oysters, holding them with the convex side down in a kitchen towel; use an oyster knife to pierce the hinge and twist to open. Cut off the upper muscle from the shell, remove the top shell, then cut off the lower muscle and pour the oyster liquid into a small bowl.

    Distribute four oysters per glass, strain the oyster liquid and add it to the oysters. Drizzle with lemon juice and spoon a little caviar onto each. Garnish with lemon zest before serving.
