Ingredients

  • 12 oysters
  • 250 g fresh young leafy spinach
  • 1 Shallot
  • 1 tbsp Olive Oil
  • 2 tbsp vegetable broth
  • Salt
  • pepper (ground)
  • nutmeg
  • 0.5 lemon
  • 250 g butter
  • 3 egg yolks
  • 75 ml dry white wine
  • 1 tsp coriander powder
  • 1 tsp piment powder
  • Salt
  • Cayenne pepper

Instructions

    Open the oysters and release the oyster meat. Clean the shells and set aside. Rinse, wash, trim, and spin-dry the spinach.

    Peel the shallot, finely dice it, and sauté in a pot with hot melted butter until translucent. Add the broth, then the spinach, letting it wilt. Season with salt, pepper, and nutmeg.

    For the hollandaise, squeeze the lemon juice. Melt the butter in a small saucepan over medium heat and remove from the flame. Whisk the eggs with white wine, spices, and a splash of lemon juice in a double boiler until frothy. Remove from heat and gradually whisk in the butter first dropwise then in a thin stream until the sauce is thick and glossy. Season with salt and cayenne pepper.

    Blanch the oyster meat in boiling salted water for about 30 seconds, remove, spread on the shells, garnish with some spinach, and drizzle with the sauce before serving.
