- 24 crabs
- 1 onion
- 1 Garlic clove
- 2 carrots
- 100 ml dry white wine
- 2 Bay leaves
- 3 sprigs thyme
- Salt

Wash the crabs thoroughly under running water and brush them. Peel the onion, garlic, and carrots. Slice the garlic and carrots into rounds and dice the onion into large cubes. Add the vegetables with the wine, bay leaves, and thyme to a large pot and pour in about 3 liters of water. Bring everything to a boil and simmer for about 10 minutes.

Season the broth and, while it is boiling vigorously, add the crabs one by one quickly into the bubbling water. Cook for 3-5 minutes depending on size and serve with the broth.
