Ingredients

  • 24 fresh oysters
  • 2 limes or lemons

Instructions

    Wash and open oysters, holding them with the convex side down in a kitchen towel, insert an oyster knife at the hinge and twist to pry open.

    Cut off the upper muscle attachment from the shell, remove the top shell, then cut off the lower muscle attachment, keeping as much oyster liquid in the bottom shell as possible.

    Clean any shell residue from the oysters with a finger and arrange them on ice or oyster plates. Serve with lemon wedges and graham crackers.
