Green Bean and Pea Salad

Ingredients
- 100 g peas
- 100 g thick green beans
- 100 g goat fresh cheese
- 1 handful young arugula
- 1 handful lamb's lettuce
- chervil
- 3 tbsp olive oil
- 1 tbsp Lemon Juice
- 1 tbsp White Wine Vinegar
- Sea salt
- pepper (ground)

Blanch the peas and beans for about 4-5 minutes in boiling salted water. Remove, shock in ice water, and drain.

Wash and trim the arugula, chervil, and lamb's lettuce. Combine all greens with olive oil, lemon juice, and white wine vinegar in a bowl. Season with sea salt and pepper, then sprinkle crumbled goat cheese on top and serve immediately.
