Oven Potatoes with Leek and Pears

- 1 kg mostly waxy potatoes
- 4 tbsp olive oil
- 1 stalk leek
- 2 pears (e.g., Williams Christ)
- 1 tbsp freshly chopped sage
- Sea salt
- 1 untreated lemon
- 1 tsp Honey
- Pepper (freshly ground)

Preheat the oven to 180°C fan-forced.

Peel the potatoes and cut them into wedges. Toss with 2 tbsp oil and spread on a parchment-lined baking tray. Bake in the oven for about 20 minutes, turning occasionally.

Meanwhile wash, trim and slice the leek diagonally into rings. Wash the pears, quarter them, remove the core and cut into wedges. Mix the leeks with the potatoes, drizzle with the remaining oil and season with sea salt. Bake until golden brown for 10-15 minutes, turning occasionally.

Grate the lemon zest and squeeze out the juice. Add the zest and honey to the vegetables at the end, taste with a splash of lemon juice and pepper, then sprinkle with sage.
