Oven Potatoes with Paprika Roasted Onions

Ingredients
- 1 kg potatoes (starchy)
- 3 tbsp olive oil
- Salt
- freshly ground pepper
- 1 Garlic clove
- 1 tsp herbs de Provence
- 80 g flour
- 1 tbsp sweet paprika powder
- 200 g onions
- 250 ml oil
- 100 g raclette cheese
- 1 bunch chives

Peel, wash and cut potatoes lengthwise into wedges. Toss with olive oil, salt, pepper and herbs de Provence in a bowl. Peel garlic, squeeze into the mixture and stir again. Line a baking sheet with parchment paper. Spread potatoes on it and bake in a preheated oven at 200°C (gas: level 3-4, fan: 180°C) for about 25 minutes, turning occasionally.

Mix flour with salt, pepper and paprika powder. Peel onions, cut into thick rings and coat them in the flour mixture. Heat oil in a pot, fry onion rings portion-wise for 3–5 minutes, then drain on kitchen paper.

Grate raclette cheese loosely over potatoes for 5–8 minutes.

Rinse chives, pat dry and cut into small ribbons. Sprinkle potatoes with onion rings and chives before serving.
