Grandma's Fish Patties

Ingredients
- 300 g salmon fillet
- 2 Spring Onions
- 1 egg yolk
- 1 tbsp freshly chopped dill
- 2 tbsp white bread crumbs
- Salt
- 0.5 tsp turmeric (ground)
- 3 tsp lemon juice
- Pepper
- 2 tbsp vegetable oil (for frying)
- 1 cucumber
- 100 g radishes
- 1 tbsp grape seed oil
- 100 g yogurt
- 2 tbsp sweet mustard
- 1 tbsp orange juice
- parsley (for garnish)
Instructions

Rinse the salmon, pat dry and roughly cube. Do not over‑chop in a food processor. Wash and trim the spring onions, slice into thin rings. Mix the onions with the egg yolk and dill into the salmon, adding enough bread crumbs to make the mixture workable. Season with salt, turmeric, 1–2 tsp lemon juice and pepper; form four large patties.

Heat oil in a non‑stick pan and fry each patty 2–3 minutes per side until golden brown.

Wash the cucumber, trim ends, cut crosswise into halves and then slice lengthwise into thin rounds or julienne. Slice radishes thinly. Arrange cucumber slices on plates and drizzle with remaining lemon juice and grape seed oil.

Whisk yogurt with mustard and orange juice; season with salt and pepper.

Drain the patties on paper towels, place them on top of the cucumber salad, garnish with parsley, and serve.
