Oven‑Baked Sweet Potato Fries

Ingredients
- 2 medium sweet potatoes
- 1 tbsp spelt whole‑grain flour
- 1 tsp Olive oil
- Pepper
- paprika powder
- Salt
Instructions

Peel or wash the sweet potatoes as desired, then dry them. Cut into ½ cm thick sticks.

Place the sticks in a bowl of water and let soak for at least 1 hour, preferably overnight.

Remove from water and pat thoroughly dry.

Preheat oven to 230 °C (convection).

Coat the sticks with flour or starch by shaking in a covered bowl until evenly coated.

Line a baking sheet with parchment paper, brush with oil. Arrange fries side‑by‑side, season with paprika and pepper; ensure they do not touch or overlap. Return to oven on middle rack and bake for about 25 minutes until crisp.

Open the oven door every 5 minutes during baking to release moisture.

After baking, turn off the oven and let fries rest for ~5 minutes before seasoning and enjoying crisp.
