Ingredients

  • 600 g boiled potatoes
  • 2 tbsp Vegetable oil
  • Salt
  • pepper (ground)
  • 8 small bratwurst sausages
  • 4 Carrots
  • 1 stalk leek
  • 400 g diced tomatoes
  • 150 ml meat broth
  • 250 g corn kernels (canned or frozen)
  • chili powder

Instructions

    Slice the potatoes (peeled if desired) and lightly brown them in a hot pan with 1 tbsp oil. Season with salt and pepper. Add the sausages and brown together.

    Preheat the oven to 200°C (400°F) with fan and top heat.

    Peel and slice the carrots. Wash, trim, and cut the leek into diagonal rings. Sauté carrots and leeks in the remaining oil for about 2 minutes. Add tomatoes and broth; simmer gently for about 10 minutes. Stir in corn, chili powder, salt to taste. Mix in potatoes and sausages, then transfer to a large or four smaller oven‑proof dishes. Bake in the oven for about 10 minutes until browned and crispy.
