Ingredients

  • 25 g butter
  • 1 onion
  • 1 Garlic clove
  • 1 leek stalk
  • 1 tsp ground coriander
  • 450 g sweet potatoes
  • 100 g Red lentils
  • 1 l vegetable broth
  • Salt
  • pepper (from grinder)
  • 2 tbsp chive rings
  • 2 red onions
  • 4 tbsp balsamic vinegar
  • 1 tbsp butter

Instructions

    Peel and finely dice the onion. Peel and cube the sweet potatoes.

    Wash, trim, and slice the leek. Rinse the lentils under running water. Sauté the onion in hot butter until translucent, add the garlic, sauté briefly, stir in coriander, sauté for a short time, then add sweet potatoes and leek; sauté with stirring for about 5 minutes. Add vegetable broth, lentils, cover, and simmer for about 30 minutes. Meanwhile peel the red onions, slice into strips, soften them in hot butter, pour in balsamic vinegar and let everything reduce slightly. Remove soup from heat, season, taste, stir in chives, and serve on plates or bowls. Garnish with balsamic onions.
