Oven-Baked Meatballs

Ingredients
- 2 slices whole grain toast
- 3 stems coriander leaves
- 2 Spring Onions
- 1 Garlic clove
- 600 g mixed ground beef
- 1 egg
- Salt
- 1 tsp ground coriander
- 0.5 tsp harissa
- 0.5 tsp lime zest (unprocessed)
- 5 Tbsp breadcrumbs
- 60 ml olive oil

Soak the toast in lukewarm water. Rinse the coriander, shake dry and finely chop the leaves. Wash, trim and finely chop the spring onions. Peel and dice the garlic. Place the ground beef in a bowl and add the drained toast. Add the chopped coriander, spring onions, garlic, and egg. Knead with hands into a smooth, well-formed meat dough. Season generously with salt, ground coriander, harissa, and lime zest. With dampened hands roll small balls and coat them evenly in breadcrumbs.

Place the meatballs on a baking sheet lined with parchment paper and bake in a preheated oven at 180°C (fan: 160°C; gas level 2–3) for about 15 minutes until golden brown. Serve warm or cold, as desired, perhaps for a picnic.
