Oven-Baked Chicken with Vegetables

- 1 chicken (about 1.2 kg, ready to cook)
- 2 tsp Curry powder
- 2 tsp Paprika powder
- 6 garlic cloves (peeled)
- 4 onions (coarsely chopped)
- 500 g Sweet potatoes
- 250 ml poultry stock
- 2 red bell peppers
- 500 g tomatoes
- 50 g green olives (pitted)
- 4 tbsp olive oil
- 2 Bay leaves
- Salt
- ground pepper

1. PREPARE VEGETABLES

Peel and cube the potatoes.

Wash, halve, deseed, and roughly cube the bell peppers.

Heat water over tomatoes, peel, quarter, core, and cube them.

2. PREPARE CHICKEN

Cut the chicken into 8 pieces and rub with salt, pepper, curry, and paprika powder. Sear in hot oil in a fireproof dish all around, then remove the meat.

3. SAUTE AND BROWN

Sauté onions in the drippings until translucent, add garlic, bay leaves, and potatoes; briefly brown and pour in stock.

Place chicken pieces on top, season with salt and pepper, and braise in a preheated oven at 180°C for about 20 minutes. Then fold in bell peppers, tomatoes, and olives, and continue cooking another 15-20 minutes. During the entire cooking time, repeatedly spoon liquid over the meat. Finish by seasoning with salt and pepper and serve garnished with parsley.
