Gnocchi Salad

Ingredients

  • 2 red bell peppers
  • 2 yellow bell peppers
  • 1 onion
  • 2 tbsp olive oil
  • 100 ml vegetable broth (canned)
  • Salt
  • ground pepper
  • 1 tbsp White Wine Vinegar
  • 400 g gnocchi
  • 1 bunch chives

Instructions

    Quarter the bell peppers, clean, rinse and dice them. Peel and dice the onion. Heat the olive oil. Briefly sauté the peppers and onion in it. Add the broth and simmer for 2-3 minutes. Season with salt, pepper, and white wine vinegar.

    Cook the gnocchi according to package instructions in salted water. Drain and let dry well. Mix with the peppers. Rinse the chives, shake off excess moisture, and cut into fine ribbons. Sprinkle the salad with chives before serving.
