Ingredients

  • 250 g butter
  • 250 g sugar
  • 2 packets vanilla sugar
  • 4 eggs
  • 2 drops lemon aroma
  • 125 g wheat flour
  • 125 g cornstarch
  • 1 tsp Baking powder
  • 2 tbsp ground almonds
  • 100 g dark chocolate couverture
  • 250 g powdered sugar
  • 1 Egg white
  • 1 tbsp Lemon Juice
  • food coloring (red, yellow, blue, green)

Instructions

    Beat the softened butter until fluffy, then stir in sugar and vanilla sugar, continuing to beat until the sugar is fully dissolved. Add eggs one at a time, stirring each into the airy mixture. Mix flour, cornstarch, and baking powder, adding by spoonfuls until incorporated.

    Grease a 26 cm long bunny-shaped mold and line it with almonds. Pour in the batter, smooth the top, and bake in a preheated oven at 175°C for about 45-55 minutes until golden brown. Remove and cool on a wire rack while still in the mold. Gently lift the bunny out of the mold.

    Chop the chocolate couverture, melt it over a warm water bath, and transfer to a piping bag. Trace the bunny contours with the melted chocolate and allow to set. Whisk powdered sugar, egg white, and lemon juice together. Divide into five portions, color each in red, green, yellow, and blue, and decorate the bunny as desired.
