Ingredients

  • 4 eggs
  • 1 pinch salt
  • 125 g butter
  • 1 kg low-fat quark
  • 1 packet vanilla pudding powder
  • 4 tbsp semolina
  • 200 g sugar
  • 1 untreated lemon (zest and juice)
  • butter (for the pan)
  • 250 g light seedless grapes
  • 100 g flour (for dusting)
  • 2 tbsp powdered sugar
  • 4 scoops vanilla ice cream

Instructions

    Separate the eggs and beat the whites with a pinch of salt until stiff peaks form. Melt the butter and mix it with the yolks. Combine the low-fat quark, pudding powder, semolina, sugar, lemon juice and zest with the yolks. Gently fold the beaten egg whites into the quark mixture. Grease the springform pan and dust it with breadcrumbs.

    Wash the grapes, toss them in flour, and fold them into the batter. Pour the batter into the prepared pan and bake in a preheated oven for 45-50 minutes, covering with parchment paper near the end if desired. Remove, let cool, lift from the pan, cut into pieces, dust with powdered sugar, and serve. Optionally add one scoop of vanilla ice cream per serving.
