Ingredients
- 1 onion
- 1 Garlic clove
- 70 ml classic vegetable broth
- 450 g frozen spinach
- 10 g coconut flakes (1 Tbsp)
- 100 g yogurt (0.1% fat)
- Salt
- Pepper
- 1 tsp curry powder
- 1 tsp ground cumin

Peel the onion and garlic. Dice the onion, press the garlic through a garlic press.

Bring the vegetable broth to a boil in a pot, add the onion, garlic, and frozen spinach. Cover and simmer over low heat for about 15 minutes.

Meanwhile, toast the coconut flakes in a dry pan until golden brown. Let them cool.

Whisk the yogurt with salt, pepper, and curry powder until smooth.

Season the spinach with salt, pepper, and cumin. Sprinkle with the toasted coconut flakes and serve with the curry yogurt sauce.
