Herb Potato Tart
Herb potato tart with spicy buttermilk quark: Eating healthy can be fun! With 230 calories per serving, the tart won’t overwhelm your waistline.
Ingredients
- 400 g waxy potatoes
- 1 Egg white
- 1 bunch Frankfurter herbs (or mixed herbs to taste)
- Salt
- Pepper
- 10 g olive oil (1 tbsp)
- 125 g buttermilk quark
- 2 tbsp ajvar
- Cayenne pepper
Instructions

Wash the potatoes, place them in a pot, cover with water and bring to a boil covered. Cook for 20-25 minutes over medium heat depending on size.

Meanwhile separate the egg and put the white into a large bowl (use the yolk elsewhere).

Wash the herbs, shake dry, pluck leaves and finely chop with a large knife.

Add the chopped herbs to the egg white. Season with salt and pepper and whisk with a fork.

Drain the potatoes, rinse under running cold water, peel them. Slice into rounds and let cool slightly.

Line a small tart pan (18 cm diameter) with parchment paper.

Mix the cooled potato slices with the herb-egg mixture and pour into the pan. Smooth the top with a spatula, drizzle with olive oil and bake in a preheated oven at 180°C (fan 160°C, gas: level 2-3) for about 30 minutes.

In the meantime whisk the buttermilk quark with ajvar in a small bowl until smooth. Season with salt and cayenne pepper. Serve alongside the potato tart.
