Orange Tomato Soup

Orange Tomato Soup: This quick cream soup with orange juice and a hint of vanilla is delicious as an appetizer or a light meal.
Ingredients
- 1 Shallot
- 1 tbsp Rapeseed Oil
- 120 ml classic vegetable broth
- 500 ml tomato juice
- 80 ml orange juice
- 3 tbsp tomato paste
- 1 tsp vanilla sugar
- 30 g light crème fraîche (15% fat)
- 30 ml heavy cream
- Salt
- white pepper
Instructions

Peel and finely dice the shallot, and sauté it until translucent in a pot with hot oil.

Add vegetable broth, tomato juice, and orange juice, and bring to a boil.

Whisk in the tomato paste and vanilla sugar, and cook everything for 10 minutes over medium heat.

Whisk the crème fraîche and heavy cream together in a small bowl and fill a piping bag with it.

Season the soup with salt and pepper to taste, and fill deep bowls with it. Pipe dollops of cream on top and serve.
