Roasted Chicory with Kiwi Dressing

Roasted chicory with kiwi dressing from Spoonsparrow brings a lot of flavor and immune-boosting vitamin C to the plate.

Ingredients

  • 4 Chicory
  • 2 tbsp olive oil
  • 0.5 tsp turmeric powder
  • 1.5 tbsp liquid honey
  • Salt
  • Pepper
  • 2 green kiwis
  • 30 g Pistachios (2 tbsp)
  • 0.25 tsp pink peppercorns
  • 100 g Field salad
  • 1 box red radish cress
  • 4 tbsp nut oil
  • 1 tsp Mustard
  • 2 tbsp lemon juice

Instructions

    Clean, wash, and halve the chicory lengthwise. Place in a baking dish or on a baking sheet. Whisk together olive oil, turmeric, and 1 tbsp honey. Season with salt and pepper. Drizzle the chicory with the turmeric oil and bake in a preheated oven at 200 °C (180 °C convection; Gas: Mark 3) for about 10 minutes.

    While the chicory is baking, peel and dice the kiwis. Roughly chop the pistachios. Crush the peppercorns. Clean, wash, and spin dry the field salad. Cut and wash the cress from the bed.

    Mix the kiwi cubes with nut oil, mustard, lemon juice, 2 tbsp water, and the remaining honey to make a dressing. Season with salt, pepper, and peppercorns. Arrange the field salad on 4 plates. Remove the chicory from the oven, place it on the field salad, drizzle with dressing, and sprinkle with radish cress and pistachios.
