Ingredients

  • 150 g sugar
  • 5 untreated oranges
  • 1 lemon (juice)
  • 1 Egg white

Instructions

    Boil the sugar with 150 ml water and simmer for about 5 minutes. Grate the zest of one orange and add it to the syrup. Let cool. Cut the grated orange in half and remove a lid from each of the remaining oranges (about 1/3). Juice all fruits and scoop out the pulp of the four large oranges, then freeze the peels.

    Combine the juice with the cooled syrup. Stir in the lemon juice. Whisk the egg white to half‑foam and fold it into the mixture with a whisk. Pour into a shallow dish and place in the freezer for at least 4 hours, stirring well every 20 minutes (or finish in an ice cream maker).

    Before serving stir vigorously again and fill the sorbet into the orange shells.
