Orange Ice

Ingredients

  • 20 g orangeat
  • 2 tbsp orange liqueur
  • 1 Vanilla bean
  • 75 ml milk
  • 2 egg yolks
  • 1 tbsp sugar
  • 70 g whipping cream
  • 2 tbsp brown sugar
  • 1 large orange

Instructions

    Finely chop the orangeat, drizzle with orange liqueur and let steep for 1 hour. Split the vanilla bean, scrape the seeds into the milk, bring to a boil together with the bean; remove the bean afterwards.

    Beat egg yolks and sugar in a metal bowl, whisk over a bain-marie until thickened. Pour into another bowl and cool. Whip cream stiffly, stir in orangeat and orange liqueur into the vanilla custard, fill two soup cups and place in the freezer for 1½ hours.

    Serve orange ice with 1 tbsp brown sugar each, grill under the oven broiler for 2 minutes until the sugar caramelizes, remove and return to the freezer for another ½ hour. Peel oranges thickly, filet them. Spoon ice onto plates, garnish with orange fillets.
