Orange Muffins

Ingredients

  • 280 g flour
  • 80 g orange zest (very finely chopped)
  • 2.5 tsp baking powder
  • 0.5 tsp Baking soda
  • 100 g sugar
  • 80 ml plant oil
  • 100 ml Orange Juice
  • 200 g Buttermilk
  • 150 g powdered sugar
  • 3 tbsp orange liqueur
  • 1 untreated orange
  • 1 tbsp sugar
  • 1 Egg white
  • powdered sugar (for dusting)
  • 1 muffin tin (or 12 small cups)
  • butter (for the cups)

Instructions

    Grease the depressions of the muffin tin, then place the tin in the freezer.

    Mix flour with orange zest, baking powder and baking soda. Lightly whisk the egg white, add sugar, oil, orange juice and buttermilk, and stir well. Add the dry mixture to the wet batter and stir just until the dry ingredients are moistened.

    Fill the cups with dough and bake in a preheated oven at 180°C for about 25 minutes.

    Remove, let the muffins rest in the cups for another 5 minutes, then take them out and cool on a wire rack.

    Whisk powdered sugar with orange liqueur until smooth, brush the muffins with it.

    Thinly peel the skin of the orange and use a small star-shaped cutter (or knife) to cut stars. Dip these first in beaten egg white, then in crystallized sugar. Place them on the glaze and dust with powdered sugar. Let dry for several hours.
