Orange Jelly with Grapefruit and Papaya

- 80 g sugar
- lemons
- 8 sheets white gelatin
- 500 ml pressed blood orange juice
- 1 grapefruit
- 1 small papaya
- mint
- 1 green apple

Cook sugar with lemon juice into a syrup. Soak gelatin in cold water. Stir 100 ml orange juice into the syrup, squeeze out the gelatin sheets and dissolve them in the hot liquid, then pour in the remaining blood orange juice. Pour the mixture into a small rectangular dish and chill for about 4 hours until set.

Peel the grapefruit thickly and cut crosswise into slices.

Halve the papaya, remove seeds, and use a sharp spoon to scoop out the flesh.

Before serving, briefly dip the jelly in hot water, transfer to a plate, and cut into ~4 cm cubes. For serving place one jelly cube on a grapefruit slice and top with some papaya. Garnish with mint leaves and optional apple strips.
