Ingredients

  • 40 g ginger
  • 70 g sugar
  • 400 ml freshly squeezed orange juice
  • 0.5 lemon
  • mint
  • 120 ml heavy cream (at least 30% fat)
  • 1 tsp sugar

Instructions

    Peel the ginger and grate finely. In a pot, bring sugar with 100 ml water to a boil. Add the ginger and orange juice. Squeeze the lemon and add its juice as well. Blend everything finely with an immersion blender.

    Pour the citrus-ginger mixture through a sieve into a wide, shallow stainless steel bowl and cover it in the freezer for at least 5 hours until frozen. During the first 2–3 hours stir vigorously every 30 minutes to prevent large ice crystals from forming.

    Whip the cream with sugar until stiff peaks form and spread over four glasses; freeze for about 30 minutes.

    Remove the glasses and ice from the freezer, scoop the ice into the prepared glasses with a sturdy spoon, and garnish with mint leaves as desired before serving.
