Octopus on Toast

Ingredients
- 800 g large pre-cooked octopus (1 large pre-cooked octopus)
- 6 garlic cloves (peeled)
- olive oil (cold-pressed)
- Salt
- Pepper (freshly ground)
- 1 lime (juice and zest)
- 40 g soft butter
- 12 green olives
- 3 Carrots
- 12 slices of white bread

Wash the octopus and place it in a large pot with salted water. Bring to a boil, then reduce heat and simmer gently for about 15 minutes. Let the cooking liquid cool for about 4 hours. Mix butter with lime zest and juice and refrigerate. Peel and grate the carrots.

Drain the octopus and cut off the tentacles. Brush the tentacles with oil and season with salt and pepper. Place under a preheated oven grill at 270°C and grill until golden brown, about 5–10 minutes. Toast the bread and rub with garlic. Arrange the toast slices on four plates and top with the octopus. Spoon 1 tsp of lime butter over the hot octopus and garnish with carrots and green olives; serve immediately.
