Orange Cookies

The orange cookies from Spoonsparrow bring a lot of vital nutrients to the dessert table thanks to whole wheat flour.

Ingredients

  • 2 Eggs
  • 1 pinch salt
  • 120 g powdered sugar made from raw cane sugar
  • 1 Organic Orange
  • 90 g butter
  • 1 tsp vanilla powder
  • 280 g spelt whole wheat flour
  • 3 tsp baking powder

Instructions

    Beat the eggs with a pinch of salt and 80 g powdered sugar in a bowl until frothy using a hand mixer.

    Rinse the orange hot, dry it, grate the zest finely. Mix butter, vanilla powder and orange zest into a smooth paste, then fold in the egg mixture. Combine flour with baking powder, sift into the batter and knead into dough. Cover and chill for 1 hour.

    Line a baking sheet with parchment paper. With wet hands form the dough into about 65 small balls (Ø 1.5 cm), roll them in the remaining powdered sugar, place on the sheet and press slightly flat.

    Bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 12–15 minutes. Remove and let cool.
