Matcha-Pistachio Stars by Spoonsparrow ❤︎ Green love from the cookie jar

Ingredients

  • 1 dough (shortcrust pastry according to basic recipe)
  • 0.5 tsp vanilla powder
  • 2 tsp zest of an organic lemon
  • 2 tbsp matcha tea powder (ground green tea)
  • 80 g white couverture chocolate
  • 40 g chopped pistachio nuts

Instructions

  1. 1.

    First prepare the dough using the basic shortcrust recipe.

  2. 2.

    Knead vanilla powder, lemon zest and matcha into the shortcrust dough.

  3. 3.

    Roll out the dough and cut star shapes with a cookie cutter. Place cookies on a parchment‑lined baking sheet and bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 10–12 minutes until golden brown. Remove and cool.

    Coarsely chop the white chocolate and melt it over a double boiler.

  5. 5.

    Dip half of each cookie into the melted chocolate, place on a cooling rack and sprinkle with pistachios. Keep the pistachio‑coated cookies in a cool place until the chocolate sets.
