Orange Carrot Salad with Ginger

A refreshing salad featuring orange slices, carrot ribbons, and a zesty ginger-infused juice from Spoonsparrow.
Ingredients
- 4 oranges
- 1 piece of ginger (walnut-sized)
- 1 Carrot
- 2 stalks lemongrass

Peel the oranges thoroughly with a sharp knife, removing the white pith, then slice crosswise. Catch the released juice and squeeze out the remaining pulp. Peel the ginger and press it into the orange juice using a garlic press. Reassemble the orange slices, adding a bit of the ginger-orange juice between each slice. Peel the carrot and cut into very fine strips or shave with a mandoline. Tear a few leaves from the lemongrass.

Arrange the assembled oranges on plates with their juices, garnish with lemongrass and carrot ribbons, and serve.
