Orange Radish Salad

Ingredients
- 4 oranges
- 3 blood oranges
- 1 Avocado
- 1 tbsp lime juice
- a handful arugula
- 250 g radishes
- 1 Shallot
- 2 tbsp raspberry vinegar
- 4 tbsp rapeseed oil
- Salt
- ground pepper
- sugar
- 1 tbsp chopped parsley
- 100 g sheep cheese
- 4 jasmine flowers (for garnish)

Squeeze one orange. Peel all remaining oranges with a sharp knife, removing any white pith. Slice alternately into red and yellow rounds and arrange on a plate. Dice the avocado after removing skin and seed; drizzle with lime juice. Rinse arugula, dry thoroughly. Wash radishes, trim ends, slice thinly or shave.

Peel and finely chop the shallot. Add to the squeezed orange juice along with raspberry vinegar, oil, salt, pepper, sugar, and parsley. Whisk into a dressing and taste for seasoning.

Crumble the sheep cheese. Place arugula, radish slices, avocado cubes, and cheese in the center of the orange rounds; drizzle with dressing before serving.
