Deer Patty Sandwich

Ingredients

  • 1 old-fashioned roll
  • 500 g deer meat (from the shoulder, boneless)
  • 1 egg
  • 1 tsp medium-hot mustard
  • 6 tbsp clarified butter
  • Salt
  • Pepper (freshly ground)
  • 2 onions
  • 1 apple
  • 4 slices white bread
  • 1 tsp balsamic vinegar

Instructions

    Soak the roll in lukewarm water. Wash the meat, pat dry, cut into cubes and grind through a small-hole meat grinder. Mix the mince with the egg, mustard and well-extracted roll, season heavily with salt and pepper. Shape 4 patties from the mixture and brown them for about 3 minutes on each side in hot clarified butter. Keep warm afterwards.

    Peel the onions, slice into rings and separate them. Wash the apple, remove the core and cut four nice slices from the center. Use the remaining apple elsewhere.

    Halve the bread slices and toast both sides crisp in a dry pan. Remove and set aside. Add 2-3 tbsp clarified butter to the hot pan and slowly cook onions with the apple over low heat for about 10 minutes until soft. Season with salt and pepper.

    Top half of the bread slices with onions, apples and one patty each. Place remaining bread on top and serve.
