Onion Stuffed with Savory Filling

Ingredients
- 800 g medium onions
- Salt
- Pepper (freshly ground)
- 100 g turkey bacon
- 150 ml sour cream
- 1 egg
- 100 g sharp grated cheese (e.g., Sbrinz)
- 2 tbsp breadcrumbs
- Salt

Instructions

Bring a pot of salted water to a boil. Preheat the oven to 200°C and grease a baking dish.

Peel the onions and simmer them in boiling salted water for 5-8 minutes until tender but not mushy. Remove, briefly cool, cut each onion in half from root to tip, scoop out about two-thirds of the flesh and set aside. Slice the onion halves on their rounded side and place them in the baking dish. Season with salt and pepper.

Heat a pan for the filling: dice the turkey bacon finely, crisp it in the hot pan, then remove. Dice the reserved onion flesh as well. Combine bacon and onion cubes with the remaining ingredients, season heavily, and mix until the mixture is cohesive but not too thick; add more breadcrumbs if needed.

Fill the onions with the mixture and bake for about 15 minutes until golden brown.
