Beef Strips with Broccoli and Bell Peppers

Ingredients

  • 250 g long grain rice
  • Salt
  • 600 g beef fillet (pre‑cooked)
  • 3 bell pepper caps (red, yellow, green)
  • 1 small broccoli head
  • 1.5 cm fresh ginger
  • 1 Garlic clove
  • 2 tbsp soy oil
  • 1 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp Sambal oelek

Instructions

    Cook the rice in 500 ml boiling salted water for about 25 minutes.

    Wash, pat dry, trim and slice the beef into thin strips. Wash the bell peppers, halve them, remove seeds and white membranes, then cut into narrow strips. Wash the broccoli, trim, separate into florets, peel stems and dice into small cubes. Blanch the florets and cubes in boiling salted water for about 5 minutes, drain, shock in cold water and let dry.

    Peel and finely chop the ginger and garlic.

    In a hot wok with oil sear the beef all around until crisp, then remove. Add ginger and garlic to the wok, sauté briefly, then add remaining vegetables. Stir‑fry for 3–4 minutes, return the beef, mix well and season with soy sauce, oyster sauce and Sambal Oelek. Plate the rice, top with the beef and vegetable stir‑fry and serve immediately.
