Onion Soup with Cheese Baguette

- 500 g vegetable onions
- 1 Garlic clove
- 4 stems thyme
- 2 tbsp butter
- 150 ml dry white wine
- 1 bay leaf
- 100 g mountain cheese
- Salt
- Pepper (freshly ground)
- 12 small thin baguette slices
- thyme (for garnish)
Instructions

Peel the onions, halve them and cut into thin half-rings. Peel and finely chop the garlic. Wash the thyme, shake dry and pluck off the leaves. Heat butter in a pot, sauté onions and garlic until lightly browned.

Deglaze with white wine and add broth. Add bay leaf and thyme leaves. Let soup simmer gently for 15-20 minutes uncovered. Meanwhile grate the cheese. Preheat oven grill. Season soup, remove bay leaf, adjust salt and pepper, and ladle into oven-safe bowls.

Place prepared baguette slices on top of each bowl and generously sprinkle with cheese. Bake under preheated oven grill until golden brown. Garnish with thyme if desired and serve hot.
