Ingredients

  • 700 g onions
  • 2 tbsp sunflower oil
  • 1 tsp sugar
  • Salt
  • black pepper (freshly ground)
  • 800 ml meat broth
  • 200 ml dry white wine
  • 2 Garlic cloves
  • 1 tbsp Lemon Juice
  • 12 thin slices baguette
  • 100 g freshly grated Gruyère cheese
  • chives sprigs for garnish

Instructions

    Peel the onions and slice them into thin rings. Heat the oil in a pot and slowly sauté the onions, stirring frequently, for 10–15 minutes until they soften. Season with sugar, salt, and pepper, then simmer for another ~10 minutes, stirring occasionally, until golden brown.

    Add the broth and wine, bring to a boil, then reduce heat and let it gently simmer for about 15 more minutes. Peel the garlic cloves and press them into the soup, seasoning with lemon juice, salt, and pepper to taste.

    Preheat the oven to 240 °C (grill setting).

    Transfer the onion soup into four fire‑proof bowls or plates. Place three slices of baguette on top of each bowl and sprinkle the grated cheese over them. Broil for 2–3 minutes until the cheese begins to melt. Sprinkle with chives before serving.
