Ingredients
- 600 g onions
- 50 g butter
- 800 ml meat broth
- 150 ml dry red wine
- 1 pinch freshly ground nutmeg
- 0.5 tsp dried thyme
- 1 pinch ground cumin
- 100 g grated raclette cheese
- 1 bunch parsley
- 12 baguette slices
- 2 Garlic cloves
- Salt
- black pepper (ground)
Instructions

Peel the onions and cut them into thin strips. In a pot, heat the butter and sauté the onions until translucent. Add the broth and wine, then stir in nutmeg, thyme, and cumin; let the soup simmer for 25 minutes.

Preheat the oven grill.

Toast the baguette slices, rub them with peeled garlic cloves, and press the garlic through a press into the soup.

Season the soup with salt and pepper, ladle it into heat‑proof bowls, top with the toasted baguette slices and cheese, and bake in the preheated oven until golden brown.
