Ingredients

  • 600 g onions
  • 50 g butter
  • 800 ml meat broth
  • 150 ml dry red wine
  • 1 pinch freshly ground nutmeg
  • 0.5 tsp dried thyme
  • 1 pinch ground cumin
  • 100 g grated raclette cheese
  • 1 bunch parsley
  • 12 baguette slices
  • 2 Garlic cloves
  • Salt
  • black pepper (ground)

Instructions

    Peel the onions and cut them into thin strips. In a pot, heat the butter and sauté the onions until translucent. Add the broth and wine, then stir in nutmeg, thyme, and cumin; let the soup simmer for 25 minutes.

    Preheat the oven grill.

    Toast the baguette slices, rub them with peeled garlic cloves, and press the garlic through a press into the soup.
