Salmon with Leek Vegetables

Ingredients
- 2 salmon steaks (about 400 g)
- 1 lemon (freshly squeezed juice)
- 1 large stalk of leek
- 2 yellow bell peppers
- 2 small white onions
- Salt
- pepper (from the mill)
- 2 tbsp olive oil
- 4 tbsp Sour cream
- Cayenne pepper

Rinse salmon steaks cold, pat dry and drizzle with 2 tbsp lemon juice. Cover briefly to marinate. Clean and wash the leek, cut into rings. Wash, clean, and dice the bell peppers. Peel the onion and slice into thin rings.

Season the fish with salt and pepper. Heat oil in a pan and sear the salmon over medium heat on both sides. Remove, wrap in foil, and keep warm. Sauté onion rings in the pan until translucent. Add the diced peppers and leek rings and cook for about 5 minutes while stirring. Stir in sour cream and season with salt, pepper, cayenne pepper, and 2 tsp lemon juice. Plate the salmon on top of the vegetables. Serve with white bread.
