Onion Dip

A fresh and flavorful dip made with caramelized onions, sherry vinegar, and a hint of cinnamon.

Ingredients

  • 600 g onions
  • 2 tbsp sherry vinegar
  • Salt
  • 3 tsp acacia honey
  • 1 pinch cinnamon
  • white pepper
  • 4 tbsp oil
  • 2 tbsp roasted pine nuts

Instructions

    Place the whole onions on a baking sheet lined with parchment paper and bake in an oven at 170°C (fan) for 40-60 minutes until soft. Remove from the oven, let cool, then peel and transfer to a blender.

    Blend the onions finely; while blending add vinegar, salt, honey, and a touch of cinnamon, tasting as you go. Slowly pour in the oil, mixing until incorporated. Spoon the dip into small bowls and refrigerate for 1 hour to allow flavors to meld.

    Taste the dip again before serving and garnish with pine nuts.
