Ingredients
- 250 g spelt flour
- 180 g butter
- 1 egg yolk
- 1 tsp salt
- 4 large onions
- 1 tbsp oil
- 100 g whipping cream
- 150 g crème fraîche
- 3 eggs
- Pepper
- nutmeg
- 150 g grated Gouda
- Salt
Instructions

Combine all dough ingredients in a bowl, cut through with a knife, then knead quickly into a smooth dough. Cover and chill for 30 minutes.

Peel and dice the onions. Sauté in a pan over medium heat with oil until translucent.

Whisk cream, crème fraîche, and eggs together; season with salt, pepper, and nutmeg. Fold in onions and cheese.

Roll out the dough on a floured surface to a size slightly larger than the tart pan, then line the pan. Spread the egg‑cream mixture over the dough. Bake in a preheated oven at 225 °C (200 °C fan) for about 30 minutes; cover with foil if needed. Let cool briefly before slicing.
